Cape
Gooseberry Sauce

kg Cape gooseberry
1
½ cups brown sugar
4
onions chopped
1
tsp ground ginger
2
tsp salt
Pinch
of cayenne pepper
Wash
and drain peeled gooseberry. Melt butter in a saucepan,
add
gooseberry , onions and sugar. Cook until the berries begin
to
soften, continue to simmer stirring occasionally until sauce
thickens
slightly. Strain the sauce if desired. Can be poured over
a
white fish fillet or chicken breast.
Cape
Gooseberry and Passion Fruit Jam
1
lb cape gooseberry
2
cups brown sugar
Pulp
of 4 passion fruit
½
cup water
1
tbsp dry sherry
Simmer
fruit and water for 40 minutes. Drain and take out
skins
and seeds. Return fruit pulp into saucepan , add sugar
and
sherry and boil until desired thickness is obtained. Delicious
over
favorite ice cream or sorbet.
